Zucchini Patties


Zucchini Patties are a refreshing side-dish alternative that your family will be asking for again.


1 1/2 lbs zucchini (seeded, salted, squeezed)

1/2 tsp salt

1/2 clove garlic, minced

2 large eggs, beaten

1/4 cup low-fat cottage cheese

1/3 cup parmesan cheese, grated

3 tbsp olive oil


Rinse zucchini and pat dry. Shred zucchini using a flat grater, then add salt. Let stand for about 15 minutes, then squeeze zucchini in a paper towel to remove any excess liquid. In a medium mixing bowl combine zucchini, garlic, eggs and Parmesan. Warm oil over medium heat in a nonstick skillet. Mold zucchini mixture into tablespoon sized patties and place in skillet. Cook patties for 4 – 5 minutes on each side, or until golden brown. Serves 4.
