Recipe: Simple, Freeze-able, Microwave & Go!

Southwestern Breakfast Burritos

1# Chorizo sausage
1/4 cup each: Onion, green & red peppers (diced small)
12 large Eggs
1/4 cup of Milk
1 cup grated Cheddar or taco blend cheese
12 Flour tortillas
In a large non-stick skillet cook sausage and veggies over med-hi heat.
Beat well the eggs and milk, pour over sausage/veggie mix, continue
pulling up egg and sausage mixture from bottom of pan while cooking,
eggs will be fluffy with a wet look due to the milk, take off burner,
fold in cheese.
Divide mixture between the 12 flour shells, fold ends and roll-up.
Serve with salsa. Ole`

Freezing: Take each burrito and wrap in plastic, place in ziplock
freezer bag.
To re-heat: Remove plastic wrap place on plate and micro
1.5 minutes, turn over and heat 1.5 minutes more.
